Bacon-Wrapped Jalapeno Popper Ingredients:

  • Medium 3-4″ Jalapenos about 15
  • 1 8 oz. block of cream cheese
  • Sharp Cheddar Cheese
  • Garlic Powder
  • Bacon

How To Cut And Deseed A Jalapeno

To start I recommend wearing gloves when working with raw jalapenos. If you don't wear gloves then be very careful not to touch your face while preparing the jalapenos and wash your hands thoroughly when you are done. I also highly recommend having a Jalapeno Corer tool to make this process much easier.

To prepare the jalapenos wash them and cut off the stems, using a corer tool remove as much of the membranes and seeds as you can. I do this over the garbage can or sink to keep the mess down. Once you have deseeded the jalapenos slice them in half length-wise and clean out any remaining seeds. If you prefer more spice you can leave a few seeds intact.

Next, using a spoon place a few teaspoons of the cheese mixture into the halved jalapenos. Using the back of the spoon or your fingers to press the filling into fill the halved jalapeno but don't overfill the peppers.

Now, Cut the bacon pieces in half and wrap each halved jalapeno with half of a piece of bacon, To secure the bacon start at the bottom of the pepper and wrap it around tightly. If needed secure the bacon with a toothpick, if the bacon is not secured it will shrink up and fall off during the cooking process.
